Apple and mustard mash with pork chops

Give traditional bangers and mash a scrumptuous twist.

Ingredients

  • 900g potatoes, peeled and cut into chunks
  • 2 apples, cored and grated
  • 2 tbsp wholegrain mustard
  • 30g butter (or sunflower spread if you prefer)
  • 4 pork chops

Method

  1. Bring a large pan of lightly salted water to the boil and cook the potatoes for 15 minutes, add the grated apple and cook for a further 5 minutes. Drain well and mash thoroughly with the mustard and butter.
  2. While the potatoes are cooking, grill the pork chops for 10 minutes each side, until cooked through; serve the chops with a generous mound of apple and mustard mash.

Cooks Tip
When making mash, always use a floury potato, such as King Edward or Maris Piper – that way you’re guaranteed a smooth texture.
