Apple crisp

This waste-saving alternative to apple crumble packs a scrumptious taste hit.

Ingredients

  • 600g cooking apples, peeled, cored and quartered
  • 75g caster sugar
  • 1 tsp ground cinnamon
  • 75g butter
  • 180g white or wholemeal breadcrumbs (made from left over bread, preferably 3 day old)
  • 50g demerara sugar
  • Finely grated zest of 1 orange
  • 25g flaked almonds

Method

  1. Place the cooking apples in a pan with the caster sugar and cinnamon. Add 2 tbsp water, cover and cook over a medium to low heat for 10 minutes until the apples have softened.
  2. Preheat the oven to 350F/180C/ Gas 4.
  3. While the apples are cooking, melt the butter in a pan and add the breadcrumbs, demerara sugar and orange zest then cook, stirring for 2 to 3 minutes until lightly toasted. Set aside
  4. Spoon the cooked apples into an ovenproof dish then sprinkle over
    the breadcrumb mixture and finish with the flaked almonds. Bake for 25 minutes until golden and crispy.
