Apple spiced Yorkshire puds

Yorkshire puddings are really versatile and can be used for both sweet and savoury dishes.

Ingredients

  • 6 frozen Yorkshire puddings, thawed
  • 1 small Bramley apple, peeled and chopped
  • 30g sultanas
  • 425g can ready to serve custard
  • 3 eggs
  • 300ml milk
  • 50g caster sugar
  • 1/2 tsp ground nutmeg

Method

  1. Preheat the oven to 170°C/325°F/ Gas 3. Place the Yorkshire puddings in a 6cm-deep ovenproof dish. Scatter over the chopped apple and sultanas.
  2. Place the custard, eggs, milk, sugar and nutmeg in a mixing bowl and whisk until evenly blended. Pour the mixture over the Yorkshires and leave to stand for 30 minutes so they absorb some of the liquid and become heavy (you don’t want them to float or they will burn).
  3. Bake for 45 minutes until the egg mixture has set and the top is golden. Serve warm.
