Asparagus with lemon thyme butter

Light and tender, this asparagus dish is a dream.

Ingredients

  • 3-4 asparagus spears per person
  • 50g butter
  • 1 small lemon
  • a few sprigs fresh thyme, washed and leaves removed
  • a small piece of Parmesan cheese to shave or ready prepared Parmesan shavings
  • freshly ground black pepper

Method

  1. Wash the asparagus and remove the tough woody end of the stems. Place in a pan of simmering water and cook gently for around 5 minutes until tender. Meanwhile remove the zest from the lemon using a zester (or remove with a peeler and chop finely).
  2. Gently melt the butter in a small pan. Cook until just starting to colour. Remove the leaves from the thyme sprigs and add to the butter together with the lemon zest. Add lemon juice to taste and remove from the heat.
  3. Drain the asparagus and divide between 2 warmed serving plates. Drizzle over the butter and top with shavings of Parmesan cheese. Add a good twist of black pepper and serve immediately.
