Avocado, prawn and pink grapefruit salad

A quick and simple combination to surprise your tastebuds.

Ingredients

  • 1 avocado
  • 1 pink grapefruit
  • 100g tiger Prawns
  • 1 tbsp chopped dill
  • black pepper
  • avocado oil
  • rocket

Method

  1. Take 1 pink grapefruit, remove skin and pith then segment, keeping juice.
  2. Add 100g cooked tiger prawns and 1 tbsp chopped dill, stir.
  3. Season with black pepper.
  4. Peel 1avocado, cut into slices and arrange on 2 plates.
  5. Pile over prawn and grapefruit mixture and then drizzle with avocado oil 
  6. Serve with washed rocket.
