Baby Gem Salad

Ingredients

  • 75ml extra virgin olive oil
  • 2 lemons, cut in half
  • 3 Baby Gem lettuces
  • 1 tsp runny honey handful fresh parsley, chopped

Method

  1. Pour some oil on the cut side of the lemons and place cut side down on a hot barbecue. Cook for 1 minute until golden.
  2. Slice the lettuces in half lengthways, drizzle the cut sides with oil and season to taste. Place on the barbecue and cook for 1-2 minutes until beginning to colour. Set aside to cool.
  3. Squeeze the juice from the roasted lemons into a bowl, mix with the honey and oil and season. Add the parsley and pour over the lettuce.
