Bacon wrapped fish

An easy to make dinner party favourite.

Ingredients

  • 4 x 200g white fish fillets
  • 200g spinach
  • 3 tbsp sundried tomato puree
  • 8 rasher thin smoked streaky bacon
  • freshly ground black pepper
  • 1 tbsp olive oil

Method

  1. Preheat the oven to 400F/200C/ Gas 6.
  2. Lay the fish fillets onto a clean chopping board. Place the spinach into a pan with a tight fitting lid, add 1 tbsp water, cover and cook for 2-3 minutes until spinach wilts. Drain well, squeezing out any excess liquid.
  3. Spread each piece of fish with a little sundried tomato puree then press equal amounts of the spinach on top. Stretch each piece of bacon with the back of a knife then use 2 rashers to wrap around each spinach topped fish fillet. Lift onto a baking tray and roast for 20 to 25 minutes until bacon is golden and fish is cooked through.
