Baked apples with sultanas

Serve up these spiced apples with a creamy core.

Ingredients

  • 4 cooking apples (Bramley)
  • 200g low fat soft cheese
  • 50g sultanas
  • ½ tsp ground cinnamon
  • 30g demerara sugar

Method

  1. Preheat the oven to 350°F 180°C/Gas 4.
  2. Core the apples then score a ring or line all the way around the middle circumference of the apple with a small, sharp knife. Place the apples on a baking tray.
  3. Beat the soft cheese, sultanas, cinnamon and sugar together.
  4. Fill each apple with the beaten mixture - push down well into the cavity where you removed the core. Bake for 25 minutes until the apples are tender.
