Baked salmon with ratatouille and olives

Try your hand at this quick and simple salmon with ratatouille.

Ingredients

  • 1 quantity ratatouille
  • 3 tbsp balsamic vinegar
  • 50g black olives, sliced
  • 4 x 115-125g salmon fillets
  • 450g baby new potatoes, halved if large

Method

  1. Preheat the oven to 200°C/ 400°F/Gas 6.
  2. Place the ratatouille in a large saucepan and stir in the balsamic vinegar and sliced olives. Bring to a gentle simmer and cook for approximately 5 minutes. Remove from the heat and pour into a large ovenproof dish. 
  3. Arrange the salmon fillets over the top, then cover loosely with foil. Bake in the preheated oven for 25 minutes, or until the fish is cooked through.
  4. Meanwhile, boil the new potatoes in lightly salted water for 10-15 minutes until tender. Drain and lightly crush with a fork.
  5. Serve the salmon and ratatouille alongside the new potatoes.
