Bangers and mash with onion gravy

Using reduced fat sausages makes this hearty meal that little bit lighter.

Ingredients

  • 8 Morrisons Eat Smart Cumberland Sausages
  • 6 stalks thyme
  • 1 tbsp olive oil
  • 2 red onions, peeled and finely sliced
  • 250ml red wine
  • 200ml beef stock, made from ½ a cube
  • 1 tbsp redcurrant jelly
  • 500g potatoes, peeled and cut into chunks
  • 1 garlic clove, peeled and crushed
  • 2 tbsp reduced fat soft cheese
  • 50ml skimmed milk

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Place the sausages in an ovenproof dish and sprinkle with thyme. Cook for 20-25 minutes until cooked through and no pink meat remains.
  2. While the sausages are cooking, heat a pan over a medium heat then add the oil and onions. Fry for 10 minutes until soft. Pour in the wine and simmer until reduced by three quarters then add the stock and reduce by half. Stir in the redcurrant jelly and season to taste.
  3. Just 12 minutes before the sausages finish cooking, boil the potatoes in a pan of lightly salted water until tender. Drain, return to the pan and mash well. Stir in the crushed garlic and soft cheese, and season with salt and black pepper to taste. Add the milk to loosen. Serve the sausages piping hot with the mash and red wine gravy.
