Bangers and mash

Homemade bangers have never tasted better.

Ingredients

  • 350g lean beef mince
  • 100g lean pork mince
  • 50g fresh breadcrumbs
  • ½ onion, peeled and finely chopped
  • 1 clove garlic, peeled and crushed
  • 1 egg, beaten
  • 2 tbsp marjoram, chopped
  • salt and freshly ground black pepper
  • 2 red onions, peeled and thinly sliced
  • 1 tsp olive oil
  • 1 tbsp flour
  • 500ml beef stock
  • 1.2kg potatoes, peeled and diced
  • 200ml semi-skimmed milk
  • 1 tbsp reduced-fat sunflower spread

Method

  1. For the sausages, place the beef, pork, breadcrumbs, onion, garlic, egg and marjoram in a bowl. Season well and mix thoroughly. Divide the mixture into 12 pieces and form each piece into a sausage shape. Place on a tray and allow to chill for a few minutes in the fridge.
  2. To make the gravy, place the red onion in a frying pan with the oil and cook for 10 minutes on a medium heat until they are soft and caramelised. Add the flour and cook for 1 minute then pour in the beef stock and bring to the boil, reduce the heat and allow to simmer for 10 minutes or until the gravy has thickened slightly. Set aside.
  3. While the gravy is cooking, place the potatoes in a large pan of cold water, bring to the boil, then simmer for 15-20 minutes, until tender.
  4. Heat a large non-stick frying pan and gently fry the sausages for 12-15 minutes, turning occasionally, until golden on all sides and cooked through.
  5. Once the potatoes are cooked, drain and return to the pan. Heat the milk then mash the potatoes, adding the warm milk along with the reduced-fat spread. Season to taste.
