- Place the meringue nests in a strong polythene bag and tie up. Gently crush with the side of a rolling pin so the meringue pieces are evenly broken into small pieces, but not into fine dust.
- Place the yogurt in a large mixing bowl and fold in the crushed meringue.
- Peel the bananas and slice thinly.
- Assemble in one large dish or 4 individual dishes. Firstly place some banana slices in the dish (or dishes), drizzle with toffee sauce, then add a generous dollop of the meringue and yogurt mixture. Repeat the layers, finishing with sliced banana and a drizzle of sauce. Serve at once.
Cooks Tip To retain a crunchy texture, these desserts must be served at once, but they are so quick to assemble that you can easily make them just before serving. If you want, you could crush the meringues in advance.
