Barbecue Rice 'n' Beans

An easy way to spice up your leftovers.

Ingredients

  • 1 tbsp sunflower oil
  • 1 onion, peeled and chopped
  • 400g leftover cooked white rice
  • 420g can red kidney beans in chilli sauce
  • 150g canned or frozen
  • sweetcorn
  • 4 tbsp barbecue sauce

Method

  1. Heat the oil in a large frying pan and add the onion.
  2. Cook for 5 minutes until softened then toss in the rice, beans, sweetcorn and barbecue sauce.
  3. Mix well, bring to the boil, cover and cook for 6 to 8 minutes until piping hot.`
