Beef and bean chilli

A spicy one-pot which is great for feeding a crowd

Ingredients

  • 200g minced beef
  • 1 red, green and yellow pepper, deseeded and sliced
  • 1 onion, peeled and finely chopped
  • 1 tbsp chilli powder
  • 1 x 400g can chopped tomatoes
  • 200ml boiling water
  • 1 x 420g can baked beans in tomato sauce

Method

  1. Heat a large, non-stick pan and add the mince. Dry fry until evenly browned, breaking up the mince with a fork as it cooks.
  2. Add the peppers onion and chilli powder and stir well so the mince is evenly combined with the chilli.
  3. Stir in the tomatoes with 200ml of boiling water. Bring to the boil, cover, reduce the heat and simmer for 40 minutes.
  4. Finally, stir in the baked beans and cook for a further 20 minutes until piping hot, then serve.
