Bats' blood soup

A mouth-watering concoction of tomato and beetroot that’ll warm the cockles of little witches and wizards.

Ingredients

  • 1 tbsp sunflower oil
  • 400g long-life beetroot, cubed
  • 1 small onion, peeled and chopped
  • 300g potatoes, peeled and cubed
  • 400g can chopped tomatoes
  • 300ml tomato juice
  • 300ml vegetable stock

Method

  1. Heat the oil in a large pan and fry the beetroot, onion and potatoes for 2 to 3 minutes. Add the chopped tomatoes, tomato juice and stock, and bring to the boil. Cover and simmer for 35 minutes.
  2. Blend in a food processor or with a hand blender until completely smooth.
  3. Heat through gently and serve with the witches’ fingers.
