Bleeding heart and sticky Ribs

Ingredients

  • 2 x pork ribs (approx 600g each)
  • 6 tbsp tomato ketchup
  • 2 tbsp honey
  • 1 tbsp fresh lemon juice
  • 1 roasted red pepper (from a jar)

Method

  1. Preheat the oven to 180°C/350°F/ Gas 4. Place the ribs in a large roasting tin and cover with 5 tbsp boiling water. Cover the whole tray with foil and place in the oven for 50 minutes.
  2. Carefully remove from the oven and drain the water away. Mix together the ketchup, honey and lemon juice and brush evenly all over the ribs. Return the ribs to the oven uncovered for 25 minutes until tender and no pink meat remains.
  3. To serve, arrange the ribs on a large board (like a skeleton’s rib cage). Cut a heart shape out of the pepper and position in the centre of the ribs.
