Boxing Day rocky road

This naughty but nice recipe uses up any leftover treats

Ingredients

  • 125g soft unsalted butter
  • 300g good-quality dark chocolate, broken into pieces
  • 3 tbsp golden syrup
  • 50g rich tea or digestive biscuits
  • 50g leftover mixed nuts
  • 4 x mince pies, broken into chunks
  • 1 x 75g pack dried cranberries
  • 2 x 25g packs mini marshmallows
  • 1 tsp cocoa or icing sugar, to dust

Method

  1. Place the butter, chocolate and syrup in a bowl. Put the bowl over a pan of simmering water, making sure that the bowl doesn’t come into contact with the water. Heat for 5-10 minutes, stirring often, until melted and well combined.  Remove the bowl from the heat and leave to cool for about 10 minutes.
  2. Meanwhile, put the biscuits and nuts in a freezer bag and bash with a rolling pin to break into pieces about 1cm in size.  Fold into the cooled chocolate mixture along with the mince pie pieces, cranberries and marshmallows.
  3. Pour this into a shallow rectangular dish about 17 x 21 x 6cm in size, cover and then place in the fridge for at least 2 hours, or for up to 12 hours, until firm.
  4. Using a sharp knife, cut the rocky road into 20 squares. Dust with cocoa or icing sugar to serve.
