Braised beef with red wine and mushrooms

This hearty roast is great for family get-togethers or entertaining friends.

Ingredients

  • 3 tbsp vegetable oil
  • 1.5kg beef brisket, boned and rolled
  • handful fresh thyme, chopped
  • handful fresh rosemary, chopped
  • 2 carrots, sliced
  • 2 large onions, halved and sliced
  • 2-3 celery sticks, finely chopped
  • 3 garlic cloves, crushed
  • 300ml red wine
  • 600ml beef stock made from 1 stock cube
  • 25g mixed dried mushrooms

Method

  1. Preheat the oven to 160°C/325°F/Gas 3.Drizzle the oil over the beef, rub it in, then season. Scatter over half the chopped herbs.
  2. Heat a large non-stick frying pan and add the beef. Sear the meat on all sides to seal in the juices, then place into an ovenproof dish..
  3. Add the carrots, onions, celery and garlic to the hot pan and cook for 1 minute. Slowly pour in the red wine. Allow to bubble for a few minutes then pour over the beef. Add the stock, dried mushrooms and remaining chopped herbs.
  4. Cover and cook in the oven for 3 hours until the beef is cooked through and the vegetables are tender.
  5. Once cooked, cover the beef in foil and let it rest. Pour the cooking liquid into a pan and boil until it reduces by half. Serve this gravy with the beef.
