Bread Sauce

Ingredients

  • 1 x 800g loaf of day-old bread
  • 1 litre milk
  • 4 cloves
  • 1 onion, peeled
  • 2 bay leaves
  • 30g butter
  • 30ml double cream
  • a little grated nutmeg

Method

  1. Remove the crusts from the bread and discard. Tear the rest into small pieces.
  2. Pour the milk into a large saucepan then press the cloves into the onion and place in the pan with the milk.
  3. Add the bay leaves and heat the milk to almost boiling point, then turn off the heat. Leave to cool for 5-10 minutes so the flavours infuse. Remove the bay leaves and onion from the milk and add the bread.
  4. Return to a low heat and cook for 15 minutes, stirring. Add in the butter and double cream. Season to taste with a few rasps of grated nutmeg, salt and black pepper.
