Bread sauce

The classic British accompaniment to a roast dinner.

Ingredients

  • 500ml semi-skimmed milk 
  • 1 onion, roughly chopped 
  • 6 whole cloves
  • 6 peppercorns 
  • 1 dried bay leaf
  • 100g fresh white breadcrumbs
  • 25g butter
  • Pinch grated nutmeg
  • 4 tbsp single cream (optional)

Method

  1. Place the milk in a small pan with the onion, cloves, peppercorns and a bay leaf and simmer gently for 15 minutes. 
  2. Strain through a sieve and return the milk to the pan.   
  3. Add the breadcrumbs and butter and simmer until thickened.  
  4. Add a pinch of nutmeg and season to taste with salt and pepper.   
  5. Add the single cream to enrich, if liked. 
  6. Immediately before serving, add a pinch of nutmeg and a swirl of olive oil, if liked.  
  7. Don’t forget, bread sauce can be cooked the day before and reheated on the day.
