Broccoli-stuffed mushrooms

Ingredients

  • 250g broccoli
  • 4 large mushrooma
  • 1 tbsp sunflower oil
  • 120g Morrisons Eat Smart Medium Fat Soft Cheese with Garlic and Herbs
  • 50g breadcrumbs
  • 1 tbsp olive oil

Method

  1. Preheat the oven to 200°C/400°F/ Gas 6. Boil 250g broccoli for 5 mins. Drain and mash. Remove the stalks from 4 large mushrooms and brushwith 1 tbsp sunflower oil. Place on a baking tray.
  2. Mix the broccoli with 120g Morrisons Eat Smart Medium Fat Soft Cheese with Garlic and Herbs. Pile onto the mushrooms. Mix together 50g breadcrumbs and 1 tbsp olive oil. Sprinkle over and bake for 20 mins until golden brown and soft.
