Brocoli and cheese gratin with crispy almond topping

Our crunchy cheesy gratin is packed with nutritious veg.

Ingredients

  • 25g butter
  • 25g plain flour
  • 400ml semi-skimmed milk
  • 1 tsp Dijon mustard
  • 150g low-fat soft cheese
  • 450g purple sprouting broccoli, trimmed
  • 4 sun-dried tomatoes, finely chopped
  • 25g fresh white breadcrumbs
  • 1 tbsp olive oil
  • 15g Parmesan cheese, grated
  • 25g ground almonds
  • 25g flaked almonds

Method

  1. Preheat the oven to 200°C/400°F/Gas 6.
  2. Melt the butter in a pan and stir in the flour, gradually add the milk and cook, stirring continuously, until you have a smooth sauce. Beat in the mustard and soft cheese.
  3. Meanwhile, bring a pan of lightly salted water to the boil and cook the broccoli for 2-3 minutes, until just tender. Drain thoroughly and arrange in an ovenproof dish. Scatter with the sun-dried tomatoes and drizzle over the sauce.
  4. In a bowl, mix together the breadcrumbs, olive oil, Parmesan, and ground and flaked almonds. Scatter over the broccoli and cook for 20 minutes, until the topping is golden and crispy.
