Brunch burrito

Ingredients

  • 1 medium ripe tomato, skinned deseeded and chopped
  • 1 spring onion, thinly sliced
  • ½ red chilli, deseeded and chopped
  • 1 tsp lemon juice
  • Burrito filling
  • 1 small red onion, thinly sliced
  • ½ red pepper, deseeded and thinly sliced
  • 1 tbsp sunflower or olive oil
  • 1 tsp balsamic vinegar
  • large pinch of paprika or a pinch of dried coriander
  • Scrambled eggs
  •  3 eggs
  • 25g sunflower spread
  • 1 tbsp fresh coriander, chopped (optional)
  • To serve
  •  2 soft tortilla wraps

Method

  1. Mix the salsa ingredients together and season to taste. Set aside.
  2. For the filling, in a frying pan, sauté the onion and pepper in the oil for 10 minutes, or until soft. Add the balsamic vinegar and paprika or coriander and cook for 1 minute. Set aside to cool slightly while you scramble the eggs.
  3. Break the eggs into a jug and whisk until blended. Season to taste. Melt the spread in a saucepan and add the eggs. Cook, stirring until softly scrambled, then stir in the coriander.
  4. Warm the tortillas in a microwave for about 10 seconds or in a dry frying pan for about 30 seconds. Divide the onion and pepper mixture between the tortillas, keeping it in the centre. Add the scrambled eggs, then a spoonful of salsa.
  5. Fold the edges in, then roll up the tortilla to make a burrito. Garnish with fresh coriander, if desired.
