Bruschetta with tomato and basil

Quick and easy to prepare and great for passing around the table.

Ingredients

  • 1 French stick
  • 2 tbsp olive oil
  • 1 clove garlic, cut in half
  • 8 plum tomatoes
  • 12 basil leaves
  • 125g Morrisons Mozzarella Light Ball
  • 1 tsp balsamic vinegar

Method

  1. Preheat the grill. Cut the loaf into 12 diagonal slices.
  2. Using a pastry brush, coat each with a little olive oil and then rub each slice with the garlic clove.
  3. Grill the bread on both sides until lightly golden.
  4. Roughly chop the tomatoes, remove and discard the seeds, tear the basil into pieces and roughly chop the mozzarella. Mix together in a bowl and sprinkle with black pepper and balsamic vinegar.
  5. Pile onto the bread just before serving.
