Bubble 'n' squeak

With our delicious recipe, bubble ‘n’ squeak will no longer only make a once a year appearance on Boxing Day. Whatever day of the yeat, make the most of your leftover mash in our tasty dish.

Ingredients

  • 2 tbsp sunflower oil
  • 2 medium leeks, trimmed and sliced
  • 800g (leftover, cooked) mashed potato
  • 300g (leftover, cooked) savoy cabbage, thinly shredded
  • 1 large egg
  • 120g Value Cheddar Cheese, cut into small cubes
  • Streaky bacon (optional), to serve

Method

  1. Heat 1 tbsp of the oil in a large pan and gently fry the leeks until soft. Remove from the heat and mix with the mashed potato and cooked cabbage.
  2. Beat the egg and add to the mixture with the cubes of cheese. Mix well.
  3. Heat the remaining oil in a non-stick frying pan and press the mixture in to form a large cake. Cook over a low heat for 10 minutes. Turn the Bubble 'n' squeak over by carefully placing a large plate over the pan, turn out then slide back into the pan with the cooked side uppermost, then cook for a further 8-10 minutes until brown.
  4. Serve cut into wedges with a couple of rashers of streaky bacon if desired.
