Cod A La Mallorquina

Ingredients

  • 6 x 250g centre-cut portions of cod
  • 2 tbsp olive oil
  • 800g potatoes, peeled and thickly sliced
  • 200ml dry white wine
  • 2 tsp smoked paprika
  • 1 head fennel, sliced thinly, fronds kept
  • 1 leek, thickly sliced
  • 2 carrots, peeled and thickly sliced
  • 150g Aleyna Marinated Artichokes
  • 250ml fish stock, from a Knorr Fish Stock cube
  • 2 lemons, thinly sliced
  • 2 tbsp flat-leaf parsley, chopped
  • 3 tbsp pine nuts, toasted
  • 3 tbsp toasted breadcrumbs
  • 2 tomatoes, thinly sliced
  • 100ml extra virgin olive oil

Method

  1. Preheat the oven to 200°C/400°F/Gas 6. Score the skin side of the cod with a sharp knife and season with salt and pepper.
  2. Heat the oil in a pan and fry the potatoes until golden, but raw inside. Place in a deep, greased baking tray, lay on the fish and pour in the wine. Sprinkle over half the paprika.
  3. Mix together the fennel, leek, carrots and artichokes. Place on top of the fish, pour over
    the stock and top with lemon slices. Cover with foil and bake for 15 minutes.
  4. Meanwhile, mix together the parsley, pine nuts and breadcrumbs. After the fish has been cooking for 15 minutes, remove the foil and lay the tomato slices across. Scatter over most of the breadcrumb mix, drizzle with oil and sprinkle with the remaining paprika. Return to the oven for 5 minutes, or until the fish is opaque and flakes easily. Serve with the remaining breadcrumbs and juices from the tray
