Calabacin Con Queso

Ingredients

  • 2 courgettes
  • 150g Roquefort
  • 20ml single cream

Method

  1. Bring a pan of salted water to the boil and cook 2 courgettes, peeled and sliced into 2inch chunks, until tender. Drain.
  2. Heat 150g Roquefort with 20ml single cream in a pan until melted.
  3. Pour over the steaming vegetables, season and serve.
