Carlos Tapas - Spicy prawns and chorizo

A pacy tapas dish with plenty of kick.

Ingredients

  • 2 tbsp olive oil
  • 3 cloves of garlic, peeled and thinly sliced
  • 1 red chilli, deseeded and finely chopped
  • 50g chorizo, finely chopped
  • Approx 300g peeled cooked prawns
  • 50ml red wine (optional)
  • 3 tbsp chopped fresh flat leaf parsley

Method

  1. Heat the olive oil in a frying pan and add the garlic, chilli and chopped chorizo, cook for 2 minutes then toss in the prawns and red wine (if using). 
  2. Pan fry for 3 to 4 minutes until piping hot. Serve at once scattered with chopped parsley and plenty of crusty bread to mop up the wonderful juices.

Cooks Tip: Keep growing pots of herbs on your window sill – with careful attention they will last weeks and you will always have a fresh supply of herbs! Fresh herb pots are available in store.
