Catherine wheel sandwiches

A cool and tasty bite, perfect for party nibbles.

Ingredients

  • 800g unsliced white sandwich loaf
  • 10 tbsp soft cheese
  • 1 cucumber
  • 5 tbsp very finely chopped chives

Method

  1. Using a serrated bread knife cut the crust from the top, bottom and sides of the loaf.  Slice the loaf lengthways into five and remove any remaining crusts.
  2. Using a rolling pin, flatten the slices and trim any uneven edges. Spread one side of each slice evenly with the soft cheese.
  3. Trim the ends from the cucumber.  Using a vegetable peeler make long ribbons from top to bottom, discarding the seeds in the centre.
  4. Lay the cucumber evenly over the bread in a single layer, top with chives and roll up each slice tightly, from the short end, like a swiss roll.  Trim the ends to neaten them up.  Cut each ‘roll’ into 5 to make pin wheels.  Serve immediately.

Cooks Tip To make ahead wrap each ‘roll’ tightly in cling film and keep cold in the fridge. Cut into pinwheels just before serving.
