Cauliflower cheese with crispy bacon

A scrumptious cauliflower winter warmer.

Ingredients

  • 1 English cauliflower, leaves removed
  • 6 rashers ‘The Best’ Smoked Streaky Bacon
  • 5 tbsp plain flour
  • 50g buttersalt and freshly ground black pepper
  • 2 tsp English mustard powder
  • 500ml semi-skimmed milk
  • 220g grated mild cheddar

Method

  1. Preheat the grill. Cut the cauliflower into large pieces, and either steam or cook in boiling salted water for 10 minutes or until just tender. Cut the bacon rashers in half and grill until golden. Set aside.
  2. Meanwhile, in a pan over a medium heat, mix together the fl our, butter, seasoning, mustard powder and milk and bring to the boil. Reduce the heat and simmer, stirring constantly. Add the cheese, reserving a handful, and stir until melted.
  3. Spoon the caulifl ower into a heatproof serving dish. Add half of the bacon and spoon over the white sauce. Top with the remaining bacon and reserved cheese and grill until golden all over. Serve piping hot.
