Chinese pork loin steaks with egg fried rice

Ingredients

  • 4 Chinese pork loin steaks
  • 3 tbsp sunflower oil
  • 350g cooked left over white rice
  • 50g frozen peas
  • 5 spring onions, trimmed and thinly sliced
  • 2 eggs, beaten

Method

  1. Slice the pork leg steaks into thin strips, heat 2 tbsp of the oil in a large non stick frying pan or wok and stir fry the pork for 5 minutes. Toss in the rice, spring onions and peas and cook for a further 5 minutes.
  2. Push the rice and pork to one side of the pan, add the remaining oil and pour in the beaten egg. Cook until the egg begins to set then toss the cooked egg through the rice and pork.
  3. Heat through for a further 2 to 3 minutes until piping hot and the pork is cooked through.
