Cheese Sauce

Ingredients

  • 40g butter
  • 40g plain flour
  • ½ vegetable stock cube
  • 570ml milk
  • 85g mature Cheddar, grated
  • a little grated nutmeg (optional)

Method

  1. Melt the butter in a medium pan. Turn the heat to low then add the flour and mix with a wooden spoon. Continue to cook for a few minutes.
  2. Crumble in half a stock cube. Change from a spoon to a whisk and pour in the milk a little at a time, whisking until you have a smooth sauce. Continue to heat the sauce until it thickens.
  3. Turn off the heat and add the grated cheese, black pepper to taste and a little nutmeg if desired.
