Cheese and herb stuffed chicken

Impress your friends with this chicken breast surprise.

Ingredients

  • 100g French beans, trimmed
  • 2 skinless chicken breasts
  • 1 lemon
  • 1 clove garlic, crushed
  • 1 tbsp chopped parsley, or chives
  • 2 tbsp Quark soft cheese
  • Ground black pepper
  • 2 rashers Eat Smart Back Bacon

Method

  1. Heat oven to 200°C/400°F/Gas 6. Blanch the green beans in salted boiling water for 3 minutes. Drain and set aside.
  2. Cut a large pocket in the side of each chicken breast. Grate the lemon zest. Beat the garlic, herbs and Quark together with the zest and lots of black pepper. Pack into the chicken cavity.
  3. Wrap the bacon around the chicken, placing the thickest part of the bacon around the cut to seal in the cheese.
  4. Place the blanched green beans in a baking tray with the chicken on top. Cut the lemon in half and place in the dish. Bake for 25 minutes until the chicken is cooked through. Serve with new potatoes.
