Cheesy chicken quesadillas

Classic Mexican inspired comfort food.

Ingredients

  • 1 tbsp sunflower oil
  • 1 red pepper, deseeded
  • 1 small onion, peeled and sliced
  • ½ tsp chilli powder
  • 200g cooked leftover chicken, shredded
  • 4 Morrisons tortilla wraps
  • 60g Cheddar cheese, grated

Method

  1. Heat the sunflower oil in a pan, add the peppers, onion and chilli powder then cook stirring for 2 to 3 minutes until just beginning to soften then add the chicken and cook for a further 5 minutes.
  2. Divide between 2 flour tortillas, spreading the mixture to the edge then sprinkle equal amount of the grated cheese over the top.
  3. Top with another flour tortilla, pressing down gently then heat a non stick frying pan and cook the quesadillas over a low heat one at a time for 2 to 3 minutes per side until the cheese melts and filling is piping hot.
  4. Turn out onto a board and cut into wedges to serve.
