Chicken and pasta salad

A quick, easy alternative to a lunchtime sarnie.

Ingredients

  • 400g leftover cooked pasta shapes such as penne or twists
  • 200g cooked left over chicken, shredded
  • 1 red pepper, deseeded and finely diced
  • ¼ cucumber, finely diced
  • 50g sultanas
  • 4 tbsp mayonnaise
  • 4 tbsp fromage frais
  • 2 tbsp mango chutney
  • 100g cheese such as a medium Cheddar, cubed
  • salt and Freshly ground black pepper

Method

  1. Place the cooked cold left over pasta into a large mixing bowl and add the chicken, red pepper, cucumber and sultanas, toss well.
  2. Mix together the mayonnaise, fromage frais and mango chutney and toss into the salad with the cheese.
  3. Season to taste before serving.
