Chicken stirfry with egg noodles

An easy supper with lots of healthy vegetables.

Ingredients

  • 2 tbsp vegetable oil
  • 1 bunch spring onions, finely chopped
  • 1 clove garlic, crushed
  • 1 red chilli, de-seeded and finely chopped
  • 5cm ginger, peeled and finely chopped
  • 4 skinless chicken breasts, sliced into thin strips
  • 2 sticks celery
  • 2 green peppers, sliced
  • 1 pack bean sprouts
  • 1 pack baby sweetcorn
  • 4 tbsp oyster sauce
  • 200mls chicken stock
  • 1 pack egg noodles

Method

  1. Heat the oil in a wok on large non stick pan, add onions, garlic, ginger and chilli and fry for 3-4 mins, add chicken and continue to cook for 5 mins.
  2. Add stock, oyster sauce and vegetables, cover and cook for 5 min or until vegetables are tender.
  3. Cook noodles according to manufacturer’s instructions.
