Chilli - Glazed Gammon and Pineapple

Ingredients

  • 500g potatoes, cut into wedges
  • 2 tsp vegetable oil
  • 1 x 400g pack smoked gammon steaks
  • ½ red chilli, deseeded and finely sliced
  • 1 x 227g can pineapple slices in juice
  • 225g spinach, washed

Method

  1. Boil the wedges for 5-10 minutes, drain, coat with oil and cook under a medium grill for 10 minutes until cooked through. Keep warm.
  2. Turn up the grill and line a tray with foil. Halve the steaks and snip the fat at 1cm intervals. Rub with chilli, add 2 tbsp pineapple juice and grill for 4 minutes.
  3. Cut the pineapple into 1cm wedges. Turn the steaks and add the pineapple and remaining juice. Grill for 4-5 minutes until cooked through. Meanwhile, wilt the spinach according to the pack and serve.
