Chilli Cheese Burgers

Ingredients

  • 1 tbsp sunflower oil
  • 1 small red onion, peeled and finely chopped
  • 2 red chillies, deseeded and finely chopped
  • 400g minced beef (from 800g pack lean mince)
  • 50g fresh breadcrumbs
  • 1 large egg, beaten
  • 50g Red Leicester cheese, grated
  • 200g can red kidney beans, drained
  • salt and freshly ground black pepper

To serve:

  • 4 burger buns
  • tomato slices and little gem lettuce leaves

Method

  1. Heat the sunflower oil in a pan and gently fry the onion and chillies until softened but not browned (this will take about 5 minutes). Remove from the heat and allow to cool for 10 minutes.
  2. Preheat the grill to medium.
  3. Place the minced beef into a mixing bowl and break up with clean hands. Then add the breadcrumbs, cooked onion and chilli mixture, beaten egg, grated cheese, kidney beans and seasoning.
  4. Mix well until thoroughly combined, divide into 4 then shape into round flat burgers.
  5. Grill the burgers under a medium to high heat for 7-8 minutes per side until cooked through and no pink meat remains.
  6. Serve each chilli cheese burger in a toasted bun with salad garnish.
