Chilli Spiced Lamb Noodles

A speedy mid-week meal all the family will love!

Ingredients

  • 300g left over cooked lamb
  • 2 tbsp sunflower oil
  • 2 cloves garlic, peeled and crushed
  • 2 red chillies, deseeded and finely chopped
  • 1 bunch spring onions, trimmed and shredded
  • 3 x 150g pouches straight to wok noodles
  • 3 tbsp low salt soy sauce

Method

  1. Shred the lamb into small strips, heat the sunflower oil in a large non stick pan or wok and add the lamb, garlic and chilli. Stir fry for 2 to 3 minutes then toss in the spring onions and noodles.
  2. Continue to stir fry for 3 to 4 minutes until piping hot, drizzle the soy sauce over and serve at once.
