Chilli con carne

This quick, satisfying chilli packs a real punch.

Ingredients

  • 2tbsp oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 400g extra lean mince beef
  • 4 sticks celery
  • 1 x 400g can chopped tomatoes
  • 1 x 400g can red kidney beans, drained and rinsed
  • Good pinch chilli powder
  • Rice to serve

Method

  1. Heat the oil in large frying pan.
  2. Add the onions and garlic and cook for 2-3 mins. Add mince and celery and cook for a further 5mins.
  3. Add tomatoes and chilli powder and cook over medium heat for 15 mins.
  4. Add beans and continue to cook for a further 5 mins.
  5. Cook rice according to manufacturer's instructions and serve with chilli on top.
