Chilli con carne

Ingredients

  • 1 quantity basic tomato sauce
  • 400g of a 500g pack lean minced beef
  • 1-2 tbsp mild chilli powder
  • 1 x 420g can kidney beans

Method

  1. Make up the basic sauce, simmering for 10 minutes.
  2. Meanwhile, cook the beef in a large non-stick frying pan over a medium heat for 8 minutes, stirring frequently until brown.
  3. Place a sieve over a bowl and pour the mince into the sieve. The bowl will collect excess fat which, once cool, you can discard.
  4. Return the mince to the pan and sprinkle with the chilli powder. Cook for 2 minutes.
  5. Add the mince to the tomato sauce with the kidney beans. Stir well and cook over a low heat for 15 minutes until piping hot. Serve with rice, natural yogurt and garnish with fresh coriander leaves.
