Chocolate ginger cornflake bars

Perfect gluten free party snacks.

Ingredients

  • 125g sunflower margarine
  • 100g clear honey
  • ½ tsp ground ginger
  • 150g plain chocolate, grated
  • 50g Morrisons Omega mix (a mixture of seeds)
  • 75g no-soak dried apricots, finely chopped
  • 25g glacé ginger pieces
  • 75g cornflakes
  • 50g rice crispies

Method

  1. Place the sunflower margarine, honey and ground ginger in a
    pan and heat together gently until dissolved.
  2. Remove from the heat and stir in the grated chocolate, Omega mix, chopped apricots, ginger, cornflakes and rice crispies. Mix together, then
    press into a 20cm x 30cm cake tin lined with baking paper.
  3. Allow to cool, then chill for 1 hour. Cut into 12 bars and serve.
