Cinnamon buttered red cabbage

Simple, shredded red cabbage with a buttery, cinnamon kiss.

Ingredients

  • 25g butter
  • 3 tbsp red wine vinegar
  • 50g demerara sugar
  • 1 cinnamon stick
  • salt and freshly ground black pepper
  • 2 tbsp fine-shred orange marmalade
  • 1 red cabbage, thinly shredded

Method

  1. Melt the butter in a large pan, with a tight-fitting lid, add the vinegar, sugar, cinnamon stick, seasoning and marmalade.
  2. Cook, stirring, until well combined, then toss in the cabbage.
  3. Cover the pan and cook over a low heat for 30 minutes, stirring after every 10 minutes until the cabbage is tender.
  4. Remove the cinnamon stick before serving.
