Corn cakes

Ingredients

  • 2 corn cobs
  • 75g frozen petit pois
  • 2 tsp curry powder
  • 75g self-raising flour
  • 2 eggs
  • 3 chopped spring onions
  • oil
  • mango chutney
  • seasoning

Method

  1. Cut the kernels off the corn cobs; hold each cob upright and, with a
    sharp knife, cut down all the way round.
  2. Steam or boil the kernels for 2 minutes with the frozen petit pois, then roughly process the veg with the curry powder, self-raising flour, eggs and chopped spring onions.
  3. Season the mixture, then fry spoonfuls of it in a little oil until golden.
  4. Serve hot, with mango chutney.
