Corn chowder

A creamy corn chowder bursting with flavour.

Ingredients

  • 1 tbsp olive oil
  • 1 chopped onion
  • 8 rashers of chopped streaky bacon
  • 350g peeled and diced potatoes
  • 1 diced red pepper
  • 2 corn cobs
  • 800ml chicken stock
  • 300ml double cream
  • fresh chopped chives to serve

Method

  1. Heat the olive oil in a pan and fry the chopped onion with the chopped streaky bacon, until the onion is soft.
  2. Add  the peeled and diced potatoes, the diced red pepper and the
    kernels from the corn cobs.
  3. Pour over the chicken stock and simmer for 15 minutes.
  4. Stir in the double cream then serve with fresh chopped chives.
