Corn pilaff

Ingredients

  • 2 tbsp oil
  • 1 onion
  • 240g basmati rice
  • 3 tbsp korma paste
  • 200ml coconut milk
  • 500ml fish stock
  • 454g fresh peas
  • 2 corn cobs
  • 200g cooked king prawns
  • 2 tbsp flaked almonds to serve

Method

  1. Heat the oil in a pan; fry the chopped onion until soft, then stir in the rice basmati rice and the korma paste.
  2. Pour in the coconut milk, the fish stock and bring to a simmer.
  3. Add the shelled fresh peas and kernels from the corn cobs.
  4.  Simmer for 18-20 minutes and, 2 minutes before the end of cooking, add the cooked king prawns.
  5. Serve garnished with the flaked almonds.
