Cranberry meringue crush

Cranberry sauce is great with turkey but there are many other ways to serve this festive fruit

Ingredients

  • 300g Ocean Spray dried cranberries 
  • 3 tbsp light muscovado sugar 
  • Juice of 2 oranges 
  • 300ml crème fraîche 
  • 300g Greek yogurt 
  • 8 meringue nests, crushed

Method

  1. Cook the cranberries with the sugar and orange juice for 10 minutes or until the berries are tender.   
  2. Cool for 15 minutes.  
  3. Mix the crème fraîche and yogurt together, fold in the crushed meringues and then gently stir in the cranberries.  
  4. Serve immediately.
