Cranberry mincemeat tart

The perfect way to round off a delicious festive feast.

Ingredients

  • 225g plain flour
  • 50g butter
  • 50g white vegetable fat
  • finely grated zest of 1 orange
  • ½ tsp ground cinnamon
  • 1 tsp caster sugar
  • 3-4 tbsp cold water
  • 300g cranberries
  • 411g jar mincemeat
  • a little milk (approx 1 tsp)
  • 25g demerara sugar
  • icing sugar to dust (optional)

Method

  1. Sift the flour into a large mixing bowl and rub in the butter and vegetable fat with your fingertips until the mixture resembles fine breadcrumbs.
  2. Add the orange zest, cinnamon and sugar and mix well. Gradually add the water a little at a time and mix to form a smooth dough. Wrap in cling film and chill for 30 minutes.
  3. Preheat the oven to 190°C/375°F/Gas 5. Roll out the dough on a lightly floured surface and use to line a 20 x 30cm rectangular flan tin. Prick the base with a fork. Re-roll the trimmings and stamp out 12 small star shapes (or trees or bells).
  4. Mix together the cranberries and mincemeat and spoon into the pastry lined tin. Top with the pastry stars and brush them with a little milk to glaze.
  5. Sprinkle the demerara sugar all over and bake for 25 minutes. Allow to cool in the tin a little before transferring to a serving plate.Dust with a little icing sugar if desired.
