Creamy turkey and leek pie

A hearty dish brilliant for using leftover turkey and veggies

Ingredients

  • 800g King Edward potatoes, peeled and cut into chunks
  • 525g leeks, trimmed and cut into chunks
  • 100g sunflower spread
  • 50g plain flour
  • 150ml white wine
  • 350ml semi-skimmed milk
  • 4 dried bay leaves
  • 750g leftover cooked lean turkey, skin and bone removed
  • 150g leftover cooked vegetables (sprouts, peas, cabbage, etc), very finely chopped

Method

  1. Preheat oven to 200°C/400°F/Gas 6. Put the potatoes into a pan of cold water and bring to the boil for 10-15 minutes, until tender. Bring another pan of water to the boil and add the leeks; return to the boil and cook for 3 minutes. Cool in a colander under cold running water and drain.
  2. Heat 50g sunflower spread in a large saucepan over a medium heat. Add the flour and stir to make a smooth paste. Cook for 1-2 minutes. Remove from the heat and gradually stir in the wine, then 300ml of the milk, stirring well between each addition. Return to the heat and add the bay leaves; bring to the boil, stirring constantly. Reduce the heat and simmer for 2 minutes. Season to taste then remove from the heat.
  3. Cut the turkey into bite-sized pieces.  Mix the meat into the white sauce, together with the drained leeks. Spoon into a 1.5-litre deep ovenproof dish and discard the bay leaves.
  4. Once the potatoes are cooked, drain well and return to the pan. Add the remaining spread, milk and the leftover veg then mash until smooth. Spoon on top of the turkey mixture until covered and bake in the oven for 30-35 minutes until golden brown.
