Crêpes Suzette

These perfect pancakes are delicious served with double cream.

Ingredients

  • 100g golden caster sugar
  • Juice and zest of 2 oranges
  • 1 tsp butter
  • 4 pancakes
  • Extra-thick double cream to serve

Method

  1. Add the sugar to a microwaveable bowl and stir in 3 tbsp orange juice. Microwave on high for 3-4 minutes until you have a bubbling caramel.
  2. Remove from the microwave, then add the rest of the juice, half the zest and the butter. Return to the microwave and heat on high for 1 minute, stir, then cook for 1 more minute until the caramel has dissolved into the juice and you have a syrupy sauce. Set aside.
  3. Make the pancakes as per the recipe. Serve each folded into quarters,
    pour over the sauce, add a spoonful of cream and a sprinkling of orange zest.
